Quick and Easy Lunch using Onion Jam

 

This is my go to easy lunch or dinner,  Our Onion Jam is such a versatile product and with just a few ingredients you can make the most amazing meals. Always remember to use quality ingredients as this always impacts the flavour in the end. Why not head to your local farmers market or store to source your ingredients if you don’t have them in your garden. My ingredients come from my large kitchen garden. I have chosen to use no dig and I use organic practice to give my plants the very best chance of success.

Today we are making a Onion Jam and Pumpkin Pizza,  You can pre cook pumpkin ahead if you are really organised or it really doesn’t take long to do as you go.

You can make extra pizzas and take to work to reheat or they make an amazing options to add to kids lunch boxes as a cold snack.

This recipe will impress family and friends bringing out the gourmet chef in you.

We love the lovely peppery flavour that Rocket brings to top off this dish.  It really works with the sweetness from the Onion Jam, you could also use baby spinach to keep that vibrant green to top off your pizza.

 

Pumpkin and Onion Jam Pizza

Get the whole family involved. you can use small pizza bases and every one can make their own. You can use whatever toppings are your favourites. My preference is always less is more when it comes to topping my Pizza.

Equipment

  • oven tray For pumpkin

Ingredients

  • 1 Pizza base use your favourite base
  • 200 grams Pumpkin
  • 1 tbsp Olive Oil
  • 3 tbsp Onion Jam
  • 1/4 Onion
  • 1 Cup Grated Cheese
  • 1 hand full Baby Rocket
  • 1 clove Garlic Optional

Instructions

  • Pre Heat oven to 220℃
  • Dice Pumpkin in small cubes, drizzle with olive oil and toss with crushed garlic. Place in oven for around 10 to 15minutes or until just tender.
  • Cut onion into thick slices, Grate cheese or cheeses I like to use a mix of mozzarella, cheddar and just a little parmesan. You can purchase a blend already grated if you like. Set aside
  • Cover pizza base with Onion Jam as much or as little as you like. You can also add tomato paste or crushed tomatoes to the Onion Jam if you find it a little too sweet.

  • Add your Pumpkin, Onion, Cheese. For a meat option you could add Pepperoni
  • Cook for 10 to 12 minutes then top with Baby Rocket
